Colour - Yellow with green glints

Tasting Notes - Strong nose of lime peel, sweet and acidic taste, a bit tart.

Known as ‘the lemon of South America’, limes are small green-yellow fruit with sour, acidic pulp, generally smaller and less sour than lemons.

The top-five lime producing countries are India, Mexico, Argentina, Brazil and Spain. A staple of Mexican, Thai and Vietnamese cooking and typical of Persian, Iraqi and Indian cuisine, limes are used for both the acidity of the juice and floral aroma of the rind. Ceviche (the cooking of raw fish in lime juice), lime pickle, marmalade and sorbet are all popular uses.

Many classic cocktails such as Gin and Tonic, Caipirinha, Margarita, Mojito and Cuba Libre have the tart, aromatic flavour of lime.

Please note: Curdling can sometimes occur when milk is mixed with acidic flavours. Here are some top tips to avoid this.

Hot Chocolates & Mochas

  • Mix syrup with chocolate powder or sauce first to help neutralise the acidity
  • Don’t heat the milk to more than 65 Degrees Celsius

Coffees

  • Mix the syrup with the coffee shot first to help neutralise the acidity
  • Don’t heat the milk to more than 65 Degrees Celsius

Cold Drinks (Milkshakes & Iced Coffees)

  • Shaking or blending the syrups with a vanilla based frappe powder will help prevent curdling

We don’t recommend using this syrup with steamers.
