Well here is one recipe adapted from the Godmother of cooking Delia Smith.<!--more--><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>110g Plain Flour<\/li>\n<li>2 Eggs (Large)<\/li>\n<li>50g butter<\/li>\n<li>210ml milk (mix with 70ml fresh water)<\/li>\n<li>pinch of salt<\/li>\n<\/ul>\n<p><strong>To serve:<\/strong><\/p>\n<ul>\n<li>caster sugar<\/li>\n<li>lemon juice<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<blockquote><p>Sift the flour and salt into a large mixing bowl. Make a hole in the centre of the mixture and break the eggs into it. Whisk the mixture ensuring all the flour gets brought into the mixture<\/p>\n<p>While continuing to whisk, gradually add the milk\/water mixture. Keep whisking until smooth. Once the mixture has the consistency of thin cream you may stop whisking.<\/p>\n<p>Melt the butter gently in a small pan. Add 2 tablespoons into the batter and begin to whisk again. Pour the remaining butter into a pan and use some kitchen roll to cover the pan ready to start making pancakes.<\/p>\n<p>Add heat to the pan and get it very hot initially before turning the heat down to medium. Using a ladle add some mixture to the pan (it may take a couple of test pancakes before you find the ideal amount of batter to make a pancake.)<\/p>\n<p>Ready? Ok, add some batter. As soon as it hits the pan swirl the pan to coat the pan evenly with the batter mixture. Using a spatula or knife to lift the pancake to check for that lovely golden colour &#8211; it should only take approx 30secs to cook. Flip the pancake with a spatula (or give it a flip in the pan if you&#8217;re brave enough) and cook for a few seconds on the other side. Tip the pan and slide the lovely pancake onto a plate.<\/p>\n<p>Put the plate over simmering water to keep them warm as you make more. Separate them with greaseproof paper.<\/p>\n<p>Serve the pancakes with lemon juice and caster sugar. Enjoy :)<\/p>\n<p>&nbsp;<\/p><\/blockquote>\n<p>Now we wasted far too much time in the kitchen at lunchtime making pancakes today. What we discovered was that they washed down well with a nice mug of hot chocolate. We make a lovely raspberry sauce for the pancakes with was just LUSH with the hot chocolate. Might take us a few weeks to burn off the calories we consumed today!
